Super Food and Super Spices! >>


To learn more about “Super Foods,” register for the free “Super Foods”: Dietitian’s Top Ten Choices on Wednesday, April 9 from 6:30 – 8:00 PM. Registered dietitian Stephanie Karakantas, RD, LD, CDE will identify and discuss the top ten super foods (and a few more) and how to make them part of your healthy diet. You’ll learn about some new, flavorful vegetables/fruits that perhaps you have been hesitant to try. Delicious Super Foods Recipe


Ginger Broccoli & Red Pepper


Ingredients

  • 1 T olive oil
  • 1 head of broccoli (about a pound), florets separated; stalks trimmed, thinly sliced
  • 2 red (yellow or orange) bell peppers, thinly sliced
  • 1 garlic clove thinly sliced
  • 1 piece fresh ginger (about 1"), peeled and slivered
  • 1/2 C water
  • 1 T fresh lemon juice
  • Salt and pepper to taste
  • Optional: add a small amount of toasted seeds or nuts for more texture (Come to class to experiment with other options!)

Directions

In a large skillet, heat oil at medium temperature; add peppers, broccoli, garlic, and ginger. Cook until broccoli is bright green, about 2 minutes.


Add the water; cover until vegetables are still tender yet crisp, no more than eight minutes. Remove from heat; add lemon juice, salt, and pepper. Add toasted seeds or nuts if you wish. Toss and serve.


Makes 4 servings.
